Well we have gone from fans, bathingsuits and pool breaks to this.........
And on the home front Maddy is earning her cooking badge. She made waffles for Sunday breakfast. And then as a thrifty young woman, she doubled the batch to freeze for the upcoming week..
2 cups all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp salt
3 tbsp sugar
3 eggs beaten
1/4 cup butter melted
2 cups buttermilk
Pam for the waffle iron
in a bowl mix dry ingredients, in a seperate bowl mix together wet ingredients.
Add the wet ingredients to the dry, allow to rest for 5 minutes. Heat the waffle iron and start making waffles.
Double the batch and lay each waffle individually on wax paper in the freezer for 2 hours then store together in a ziploc freezer bag.

Great job Maddy! You are becoming the great little helper. Maybe you can fix some for me sometime.
Love Grandma

between this recipe and another I saw earlier for pancakes, I shouldn't have to buy frozen ever again!
